All of this eventually finds its way into the cup. Our Pacamara comes from this ongoing search. But Catalán de Las Mercedes is about more than coffee. A young variety from a finca with more than 170 years of history. We thought that was a pretty good reason to put it in the roaster. The land itself carries an even older story. Nearby stands Chuwa Nima’ Ab’aj, an ancient Kaqchikel city whose name means “in front of the great stone.” A variety born in El Salvador from the crossing of Pacas and Maragogipe, today grown throughout Central America. More than 170 years of family history are now carried forward by Nicholas Hammond, who has chosen to preserve the finca’s traditional varieties while also exploring new ones, including Gesha, Maragogipe and Pacamara. In the mountains of San Martn Jilotepeque, Chimaltenango, coffee has been grown at Cataln de Las Mercedes since 1851. In 2021, the Hammond family created an educational center inside the finca for the children of farm workers — giving families a place to stay together during harvest while children can learn and play.
